Use an external viewer like VLC or IINA. They’ll automatically find a subtitle file in the same directory as the video as long as it has the same filename.

You can also convert an OCR’ed PDF to a text file, see Data->Convert->To Plain Text. This will create a .txt file in addition to the PDF file.
