Curious : .eps files are the only files failing to index on "junk drawer" database

EPS as PS does not contain a text layer. So it can’t be (sensibly) be indexed. You can convert it to PDF, OCR that and then index it. If your macOS does still support PS/EPS or if you have a tool that does, that is.
